About us

Ichifuji’s motsunabe aims to be the “true way of motsunabe” recognized by the local community.

Seasoned with miso and soy sauce in a carefully drawn Japanese dashi broth.
Finished with premium motsu (beef offal) and fresh vegetables from Kyushu.
The motsu is carefully hand-peeled of its thin membrane piece by piece, so it blossoms open like a flower, offering a soft texture that melts smoothly on the tongue.

Our menu includes Vinegar MOTSU made with rare beef rectum — only about 300g can be taken from a single head of cattle — as well as fresh, 100% domestic horse sashimi delivered directly from Koga farm in Kumamoto (lean horse sashimi, marbled horse sashimi, and horse liver sashimi).
Our menu also features sake and shochu found only in Kyushu, allowing guests to fully savor everything the region has to offer.

We offer three types of MOTSUNABE: “Miso,” “Soy sauce,” and “Ponzu.”

Our Commitment to Miso

We use our original blend miso, carefully strained by hand one batch at a time.
This creates a rich, deep miso soup unlike any other.
For the garlic that’s essential to the soup, we use grated garlic from Aomori Prefecture, chosen for how well it pairs with the miso.
This grated garlic creates the irresistible aroma of our miso MOTSUNABE that keeps guests coming back for more.

Our Commitment to Soy Sauce

We simmer kombu dashi that has been steeped overnight, then add bonito flakes to draw out a rich, savory stock.
For the soy sauce hot pot, domestic garlic is sliced rather than grated, giving the soup a rounder aroma and a smooth finish.

IMAIZUMI main branch is the very first “MOTSUNABE ICHIFUJI” location, one that will continue for the next 100 years — and it remains our most historic restaurant.
Today it spans two floors with 60 seats, but when it first opened, it was a small restaurant of only about 20 seats, occupying just the area that is now the Honten side.
Even our CEO, Oshima, once stood on the floor himself, carefully preparing each pot of motsunabe and sharing his passion with every guest through the dish.
On weekdays the restaurant is filled with locals from Hakata, while on weekends and holidays it fills with visitors from outside the prefecture.
Thanks to its location in Imaizumi, it is also something of a hidden gem known only to those in the know.

The restaurant is made up of two floors, the “Honten” and the “Hanare,” styled with a chic concept that blends “Japanese” and “modern” design.

Honten Side

This area has 28 seats in total, including counter seats and window seats with a full view of the night skyline, making it a recommended space for a discreet, grown-up date, or for anyone who wants to relax and unwind in a calm, comfortable setting.
All seating is horigotatsu-style (sunken kotatsu), perfect for a relaxed meal.
It’s also a space where guests with mobility difficulties and elderly guests can dine with peace of mind.
The restaurant is popular with local women in their 20s to 40s and is easy for first-time visitors to enjoy as well.

Hanare Side

A floor of seven fully private rooms.
From rooms for two to a large hall seating up to about 30 people, this floor can be used flexibly to suit any occasion.
Please feel free to use it for banquet reservations, business entertaining, and more.
Tatami-style private rooms are also available, offering a space where guests with children can dine with peace of mind.
